After mastering all the cutting techniques, experienced chefs in Japan receive this knife with the Kiritsuke blade shape as a symbol of their allround expertise. Similar to the Santoku, this traditional blade shape is equally suitable for cutting vegetables, fish or meat. The pointed, 15 cm long blade is ideal not only for chopping, paring, portioning and cutting, but also for filetting. The notch at the rear end of the blade allows the handle and blade to be enclosed, allowing safe handling when working quickly.
