The Capucin appeared about 250 years ago in the region of Saint-Etienne but it is probably thanks to the shepherds of the Pyrenees that we owe its name, since they carved the handle of their pocket knives in the shape of the hood worn by the Capuchin monks. Very often used as an icon in the visuals of the label Esprit de Thiers, the Capucin was adapted for the table by Claude Dozorme, giving this regional product a very current use.
